Researchers will establish the YAN concentrations and composition in Chenin blanc and Sauvignon blanc musts from different areas in South Africa. Such an investigation would benefit winemakers in their decision for the optimal additional nutrition, be it DAP or complex nutrients, adapted to the yeast of choice.

Establishing YAN/FAN/amino acid profiles for various cultivars and areas will help winemakers to choose the optimal nutrition in the future and even to predict harvest YAN in the future.

Also, establishing a centralized database to which the cellars themselves can contribute will be beneficial to the industry starting with medium term – as trends and possible correlations can be established with for example climatic data.
